A quick and easy to make recipe for a fresh and light bite.
Sometimes, we simply do not have time to cook. Commitments of all sorts can take up those precious minutes we would love to spend doing something else.
So you must adapt.
Today, I had about 20 minutes to put something together.
⌈ In my fridge there was: spinach – goat’s cheese
And in my cupboard: olive oil – sesame seeds – honey ⌋
So i said to myself “ok, well deal with it”, and I did.
Not the most creative salad but it was so fresh and light and sweet that I actually enjoyed it.
- Fresh spinach leaves
- Goat’s cheese
- Olive oil
- Sesame seeds (if desired)
- Wash spinach leaves
- Chop up bits of goat’s cheese and throw in
- Sprinkle the sesame seeds
- Add a splash of honey and olive oil
